Creamy Berry Tart

Preparation time: 15 minutes
Chilling time: 30 minutes
Total time: 45 minutes

Ingredients:

  • Base:
  • 6 Hazelnut Choc Slices
  • 6 Medjool dates
  • 4 tbsp coconut flour
  • 1 tbsp cocoa powder
  • Water as needed
  • Filling:
  • 4 bananas
  • 1 cup cashews
  • 100g White Choc Diamonds (melted)Toppings:
  • Raspberries & blueberries as needed
  • 10 mint leaves

    Preparation:

For the base, process all ingredients except the water in a blender or food processor until a crumbly dough forms. If the dough is too dry, add a little water at a time (be careful to use only a small amount, otherwise the dough will quickly become too wet). Press the dough into a tart pan lined with baking paper and refrigerate. Meanwhile, blend all the filling ingredients and pour onto the base. Garnish the tart with the berries and mint, and refrigerate for another 30 minutes.
