Raw Cinnamon Rolls, Canelbullar, or simply cinnamon buns

Who doesn't know the popular Swedish canelbullar? Everyone loves them! There are a thousand versions floating around online (or at Ikea ;)), some totally conventional, with sooooooo much refined sugar, butter, milk, and white wheat flour, some quite vegan but by no means healthy, some lactose-free but still with sugar and gluten, some gluten- and sugar-free but with butter... you know what I'm getting at!?

Until now, I had always been missing a recipe that had no compromises on taste, and of course, it had to be sugar-free, gluten-free, and vegan. And for the next challenge, I set myself the goal that it should also be raw. So suitable for a raw food diet (no foods heated above 42C°)!

Sounds impossible? Nothing is impossible for me, so here is my invention:

All you need are: bananas, zucchini, dates, cinnamon, that's it – easy peasy!

For equipment, as so often, you need the good old Vitamix, I use this one, which has never let me down, and a dehydrator! I can recommend this one.

Let's go – let's make some rawsome cinnamon rolls!

For approx. 6-8 rolls

Raw Cinnamon Rolls, Canelbullar or Simply Cinnamon Rolls

Preparation time: 15 minutes
Drying time: 7 hours
Total time: 7 hours and 15 minutes

Ingredients:

Cinnamon rolls:

  • 6 bananas
  • 2 zucchinis
  • Filling:
  • 200 g dates (possibly soaked overnight if your blender isn't that powerful)
  • Cinnamon
  • Water

Icing:

  • Coconut yogurt as needed (alternatively cashew, almond, or coconut mus)
  • 1 tsp cinnamon

Preparation:

  1. Cut the bananas and zucchini into horizontal slices (approx. 3 mm thick), dehydrate them in the dehydrator for 5-7 hours.
  2. In the meantime, for the filling, blend the dates with just enough water to create a paste or caramel-like mixture. Take the dried zucchini and banana strips out of the dehydrator and brush each one with the date caramel, sprinkle with cinnamon, and place them in a long row, alternating one zucchini and one banana slice, overlapping them. Roll them up from one side and garnish with cinnamon and icing as needed.
