Carrot cake comes in a thousand variations: non-vegan, vegan, sugar-free, gluten-free, high-fat-low-carb, raw, and more. I love carrot cake so much, which is why these delicious carrot balls were created. The best part (after the taste) is that you don't need to turn on the oven or the stove to make them... at most, you'll need a dehydrator!

Of course, these carrot balls contain carrots. If you have a juicer and juice regularly, you can make carrot juice and use the pulp as a base. If you don't have a juicer, you can simply grate the carrots and use them instead!

The other ingredients are simple, and apart from the apple fiber powder, you probably already have them in your pantry. The apple fiber powder from Natuerlichlangleben boosts the fiber content and gives the mixture a nice firm, sticky consistency. However, it is optional and can be omitted. The other ingredients are tahini, banana, cinnamon, dates, and raisins.

These little balls are perfect as a sweet snack, at children's birthday parties, garden parties, or simply as a treat to bring along. Although they are already very moist, I still prefer to enjoy them with something to dip them in. It can be anything, but my date caramel is my number one choice. If you use fat sparingly, any kind of nut butter also makes a delicious dip. Cashew butter, almond butter, walnut butter, peanut butter, tahini, etc... definitely a real treat!

Here is the recipe for you.

Makes about 20 balls, depending on how large you roll them.

Raw Vegan Carrot Balls

Preparation time: 20 minutes
Total time: 20 minutes

Ingredients:

  • Carrot pulp from 6 carrots or 6 grated carrots
  • 1 mashed banana
  • 6 pitted, chopped Medjool dates
  • 1 handful of raisins
  • 2 tbsp tahini
  • 1 tsp cinnamon
  • 1 pinch of vanilla powder
  • 4 tbsp apple fiber powder (from natuerlichlangleben)

Preparation:

  1. Mix all the ingredients well in a large bowl, knead by hand into a sticky mass, and roll into balls of any size. Then either dry in a dehydrator for 3–4 hours or store in the freezer and take out about 20 minutes before serving.
  2. Serve and enjoy plain, with tea, or with any dip of your choice.
