Savory pulp bread before dehydrating with herbs on baking paper

Pulp is often considered waste! But you can actually make so much with it. What exactly is pulp?

Anyone who owns a juicer probably knows this, because plant fibers (fiber) are left over when juicing. Depending on what vegetables or fruits are juiced, the pulp is suitable for making various breads/cakes. For example, if kale, spinach, or celery is juiced, you can make a great savory bread from it. Carrots, beets, apples, and pears, on the other hand, are perfect for sweet breads or cakes.

I usually juice vegetables and fruits and use this pulp to bake bread/cakes. You don't even need many ingredients for this. I simply mix the pulp with a mashed banana and almond flour or coconut flour, a little liquid (water or coconut water), and some locust bean gum and psyllium husk to bind it. To give the whole thing a spicy note, a lot of cinnamon, vanilla powder, and powdered cloves are added. There are so many ways to vary the pulp bread/cake with fruit, nuts, seeds, cocoa, etc. Further down, I will give you a few tips on how you can vary the cake and the basic recipe.

Loaf bread with seeds on a wire rack, decorated with autumn leaves

Tips:

Variations for the sweet bread:

  • Use mango, blueberries, or raspberries instead of the apple
  • Fold chopped almonds, coconut flakes, or ground hazelnuts into the dough
  • Fold cocoa and sugar-free chocolate pieces into the dough
  • Fold raisins and sugar-free marzipan into the dough

For the savory version, the banana is replaced by a tablespoon of chia seeds, which were previously soaked in a little water. Vanilla, cinnamon, and cloves are replaced by oregano, thyme, and paprika. The apple can be replaced with grated pumpkin or carrots, or omitted.

Variations for the savory bread:

  • Mix pumpkin seeds or sunflower seeds into the dough
  • Fold sesame seeds and 2 tbsp tahini into the dough
  • Fold 2 tbsp caraway seeds and 1-2 handfuls of sauerkraut into the dough
