Vegetable sushi in nori sheets with bell pepper, red cabbage and cucumber

And here we go again with vegan sushi…

Why not? It is simply super delicious, quick to prepare and soooo healthy! So it can definitely be served at least once a week. Just because of the nori seaweed, which is packed with important nutrients, especially iodine, it is worth including sushi in the menu more often. In my sushi recipe, I rely entirely on vegetables, simply because they (with fruit) are the best thing you can offer your body. Vegetables provide the body with everything it needs in terms of nutrients, they are full of vitamins, minerals, trace elements, fiber and and and…

If you haven't already, this recipe is a good reason to eat more vegetables. Since the sushi rolls are so small, you can eat quite a few of them until you are full. Or you can serve them as an appetizer, snack or light dinner. The vegetable sushi rolls are served with coconut aminos, peanut dip or lemon tahini dressing. Of course, you can also serve any other sauce with it.

What is your favorite sauce? Do you have a standard dressing or dip that you particularly like to serve? I look forward to more dressing ideas!!!

Tip:

Fill some rolls only with green vegetables, some only with red vegetables, some with a mix of everything… it looks so beautiful!
