Hey there!

Ok, I don't have much to say about this, this recipe which I will share with you in a moment speaks for itself! I mean, who doesn't like wraps and if they are also vegan, raw and 100% delicious, then there is absolutely no reason to miss out. So the basic ingredients you need for this are chard leaves, we use them as the wrap! For the filling you just need various vegetables, there really are no rules here, in my version I used red cabbage, mushrooms, corn and snap peas. This dressing is perfect as a sauce, but you can also just use raw tahini or peanut butter mixed with lemon juice.

Raw Vegan Wraps

Preparation time: 15 minutes
Total time: 15 minutes

Ingredients:

  • 5-7 large chard leaves
  • 1 serving of pumpkin seed dip (link further up in this post)
  • 4 sliced mushrooms
  • 1 handful of snap peas
  • Kernels from one raw corn cob (yes, corn can be eaten raw and it tastes delicious)
  • 1 handful of finely chopped red cabbage
  • 2 tbsp nutritional yeast

Preparation:

  1. To be able to roll the chard leaves better, place each individual leaf with the inside facing down on the work surface, the stem of the leaf is too stiff to roll it up, so now carefully from the top of the leaf down towards the stem, shave off the entire leaf stalk a bit with a very sharp knife. Then turn the leaf over again, spread with 1-2 tsp of pumpkin seed dip, fill with the prepared vegetables and sprinkle with a few nutritional yeast flakes. Now roll up the chard leaf like a wrap and cut once in the middle. Proceed the same way with the remaining leaves and serve the finished wraps with the remaining dip. Take a bite and enjoy!!!
